Our PERU Washed comes from the El Palto farm, a small 3-hectare plot owned and run by Jacinto Jara and his family! Following the harvest months of June to October the cherries are washed, pulped and the fermented for 32 hours. After the fermentation process, the cherries are washed again and then dried in solar tents for 15 days, before being prepped for storage. We end up with an interesting flavour profile, hints of mango and raspberry with a round tea like mouthfeel!
