This coffee from Santa Ana Volcano is carefully picked at the farm and depulped at the mill „Vivagua“. The coffee then goes into fermentation tanks for about 3-4 hours before it is washed and then dried on patios. Once the coffee reaches 12% internal humidity, it gets packed into yute bags for transport. We end up with a full bodied nutty coffee, a pleasantly mild acidity and the aroma of yellow fruits, perfect as a single origin coffee or as a blend! A must try for any espresso enthusiast!
